Step 1: Prepare Your Ingredients

  • Rinse and chop your greens (spinach or kale).
  • Dice the onion and mince the garlic.

Step 2: Cook the Sausage

  • Heat olive oil in a large pot over medium heat.
  • Add the sausage and cook until browned, breaking it into smaller pieces as it cooks. Once done, remove it from the pot and set aside.

Step 3: Sauté the Aromatics

  • In the same pot, add the diced onion and minced garlic.
  • Sauté until the onion becomes translucent and the garlic is fragrant, about 3–5 minutes.

Step 4: Build the Soup Base

  • Pour in the chicken broth and bring it to a gentle boil.
  • Stir in the white beans and cooked sausage, allowing the flavors to meld.

Step 5: Add the Greens

  • Gently stir in the spinach or kale, letting it wilt and soften as the soup simmers.
  • Reduce the heat and let the soup simmer for 15–20 minutes.

Step 6: Optional Creamy Finish

  • For a richer texture, stir in the heavy cream during the last 5 minutes of cooking.
