Step 1: Prepare Your Ingredients
Rinse and chop your greens (spinach or kale).
Dice the onion and mince the garlic.
Step 2: Cook the Sausage
Heat olive oil in a large pot over medium heat.
Add the sausage and cook until browned, breaking it into smaller pieces as it cooks. Once done, remove it from the pot and set aside.
Step 3: Sauté the Aromatics
In the same pot, add the diced onion and minced garlic.
Sauté until the onion becomes translucent and the garlic is fragrant, about 3–5 minutes.
Step 4: Build the Soup Base
Pour in the chicken broth and bring it to a gentle boil.
Stir in the white beans and cooked sausage, allowing the flavors to meld.
Step 5: Add the Greens
Gently stir in the spinach or kale, letting it wilt and soften as the soup simmers.
Reduce the heat and let the soup simmer for 15–20 minutes.
Step 6: Optional Creamy Finish
For a richer texture, stir in the heavy cream during the last 5 minutes of cooking.
Step 7: Season and Serve
Taste and adjust the seasoning with salt and pepper.
