Step 1: Prepare the Potatoes
Peel and boil the potatoes in salted water until tender.
Mash the cooked potatoes until smooth, adding a pinch of salt to enhance flavor. Let the mashed potatoes cool slightly so they’re easier to handle.
Step 2: Make the Filling
Heat a drizzle of oil in a skillet over medium heat. Add the onions and garlic, sautéing until soft and fragrant.
Stir in the ground beef and cook until browned. Season with paprika, cumin, salt, and pepper.
For an authentic touch, fold in chopped hard-boiled eggs once the beef has cooled slightly.
Step 3: Assemble the Papas Rellenas
Take a handful of mashed potatoes and flatten it into a disc.
Add a spoonful of filling to the center.
Gently fold the edges of the potato over the filling, sealing it completely. Shape it into a ball or oval.
Step 4: Coat and Fry
